YUMMY MANGO CURRIED CHICKEN
Yoghurt makes a great marinate in this recipe & the mango goes well with the chicken
SERVING SIZE:
Serves 4
INGREDIENTS:
4 boneless, skinless chicken breasts
1/2 cup mango chutney
1/2 cup Hansells Natural Real Yoghurt
1 tablespoon Madras curry powder
1/4 cup roughly chopped blanched peanuts
1 tablespoon chopped parsley or coriander
INSTRUCTIONS:
Remove skin from chicken. Mix chutney, Real Yoghurt and curry powder together.Spread over chicken. Place in a roasting dish. Sprinkle peanuts over top of breasts.Bake at 190°C for 25 to 30 minutes or until chicken juices run clear when tested and peanuts are golden.Serve garnished with chopped fresh parsley or coriander
