VANILLA AND WHITE CHOCOLATE WAFERS

Great topped with icecream or Panna cotta.

INGREDIENTS:

50g butter
2 egg whites
½ cup caster sugar
1tablespoon Hansells Gourmet Vanilla
½ cup flour
¼ cup finely chopped white chocolate dots
 

INSTRUCTIONS:

Melt butter and leave to cool. Beat egg whites until stiff. Add sugar and vanilla and beat well. Mix in butter until combined. Fold in sifted flour and white chocolate. Place teaspoonsful of mixture on a baking-paper-lined oven tray. Flatten with the back of a spoon to a 7cm diameter circle. Bake at 160 degrees C for 8 - 10 minutes or until lightly golden.
