TOMATO CHUTNEY
Low fat chutney recipe
INGREDIENTS:
1 kg firm tomatoes
2 cooking apples
1 onion
1 tblsp salt
1 cup pitted dates
1½ cups white vinegar
2 cloves garlic
1 tblsp yellow mustard seeds
2 tsps Empire Black Peppercorns
1 tblsp Sucaryl Liquid Sweetener
INSTRUCTIONS:
Wash tomatoes. Chop roughly and place in a large non-metallic bowl.
Peel, core and chop apples. Peel onion and finely chop.
Mix apples and onions with tomatoes. Sprinkle over salt and leave to stand overnight.
Cover dates with boiling water and leave to soak overnight.
Next day drain tomato mixture and dates. Chop dates finely.
Place tomato mixture, date and vinegar in a large saucepan.
Crush, peel and chop garlic. Add to saucepan.
Tie mustard seeds and peppercorns together in a muslin bag. Add to saucepan.
Bring to boil and simmer for about 30 minutes until thickened, stirring occasionally.
Remove spice bag and stir in Sucaryl.
Pack into hot, clean, dry jars and seal.
