TANDOORI CHICKEN KEBABS WITH SPICED CUCUMBER AND REAL YOGHURT SAUCE
Real yoghurt makes a great marinade for this tasty chicken dish
INGREDIENTS:
14 skewers.
½ cup prepared Classic Greek Style Real Yoghurt
2 tablespoons Empire Mild Curry Powder
1 tablespoon tomato paste
4 boneless, skinless chicken breasts
Filling
1 large cucumber
1/2 teaspoon salt
1 cup Hansells Natural Real Yoghurt
1 clove garlic, crushed
1 tablespoon chopped, fresh mint
2 teaspoons lemon juice
freshly ground black pepper
Peel and grate the cucumber. Sprinkle with the salt andleave to stand for 30 minutes.
Drain the cucumber gently, squeezing out the liquid. Add the remaining ingredients.
INSTRUCTIONS:
Soak skewers in water.
Mix Real Yoghurt, curry powderand tomato paste together in a shallow dish.
Cut chicken in strips about 2cm wide and coat with Real Yoghurt mixture.
Thread onto soaked skewers and grill or barbecue for about 10 minutes or until chicken is cooked.
