TANDOORI CHICKEN
Real yoghurt makes a great marinade for this tasty chicken dish
SERVING SIZE:
Serves 4 to 6
INGREDIENTS:
6 single boneless chicken breasts
2 tablespoons lemon juice
1 teaspoon salt
3 cloves garlic
1 cup Hansells Natural Real Yoghurt
1/4 teaspoon ground chilli
1 teaspoon ground ginger
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon ground cardamom
freshly ground black pepper
1 teaspoon turmeric
SERVING SUGGESTION:
Tandoori chicken is traditionally cooked in a special oven called a tandoor. There are many variations of this recipe so adapt the ingredients to what's in your spice cupboard.
INSTRUCTIONS:
Remove skin from chicken and cut slashes in top of each breast.Sprinkle over lemon juice and salt and set aside while preparing tandoori mix.Crush, peel and finely chop garlic.Mix garlic, Real Yoghurt, chilli, ginger, coriander, cumin, cardamom, pepper and turmeric together.Spread mixture all over chicken.Marinate in the refrigerator overnight if possible for the flavours to develop or compromise if needs be and leave at room temperature for about 1 hour.Barbecue or grill chicken until it looks dry on the outside and flesh is cooked, turning during cooking and basting with marinade.
