STICKY DATE PUDDING

This has become a fashionable restaurant dessert. Try this version and you certainly won't feel sorry for yourself choosing a lighter style dessert.

SERVING SIZE:

INGREDIENTS:

2 cups dates
1 cup water
1 tsp Hansells Baking Soda
1 tsp Sucaryl liquid sweetener
1 cup wholemeal flour
2 egg whites
 

INSTRUCTIONS:

Chop dates finely. Pour over water. Bring to the boil and simmer for 10 minutes or until mushy. Remove from heat and mix in baking soda and Sucaryl. Mix in flour. Beat egg whites until stiff and fold into date mixture. Pour mixture into a greased 4 cup capacity pudding basin. Cover with baking paper then a layer of foil. Tie paper and foil layers around edge of basin, sealing edges to stop water getting in. Place the basin in a saucepan of boiling water. Cover with a lid and simmer for 1 hour. Serve hot.
