SPICY REAL YOGHURT RICE
This is a traditional Southern Indian rice dish served at room temperature as a curry accompaniment. You may have to go to a speciality food store to buy the mustards seeds or try a health food store.

INGREDIENTS:
1 cup long grain rice
4 cups boiling water
1 cup Hansells Natural Real Yoghurt
1 teaspoon salt
2 green chillies
2 tablespoons grated root ginger
1 tablespoon peanut oil
1 tablespoon black mustard seeds
2 tablespoons chopped fresh coriander
INSTRUCTIONS:
Wash rice. Cook in measured boiling water for 12 minutes or until tender.Drain well.
Mix in Real Yoghurt and salt while rice is hot.
Cut chillies lengthwise. Remove seeds and slice flesh thinly.
Mix chillies and ginger through rice mixture.
Heat oil in a frying pan and carefully pop mustard seeds over a low heat.
Add to rice with coriander.
Mix until combined.
