SPICY LAMB BALLS IN FOCACCIA POCKETS WITH MANGO, MINT AND REAL YOGHURT SALSA

Delicious and easy light meal.

INGREDIENTS:

 

1 small onion

500g lean lamb or beef mince

1 tablespoon prepared minced ginger

¼ teaspoon Empire Black Pepper

¼ teaspoon salt

1 teaspoon Empire Brindavin Medium Curry Powder

1 Pane Toscano Focaccia Bread

Alfa One Rice Bran Oil Spray

 

Mango, Mint And Real Yoghurt Salsa

 ½ cup prepared Classic Greek Style Real Yoghurt

½ cup drained, chopped, canned or fresh mango

¼ cup chopped fresh mint

Salt

INSTRUCTIONS:

Peel and finely chop onion. Mix onion, mince, ginger, pepper, salt and curry powder together until well combined. Roll tablespoonfuls into balls. Place on a preheated barbecue hot plate and cook for 10–15minutes, turning until cooked. Cut focaccia into quarters. Split each piece through the middle, almost through to the long side. Spray bread with oil spray and toast on the barbecue hotplate. Fill focaccia pockets with spicy lamb balls and Mango, Mint and Real Yoghurt Salsa.

 

Mango, Mint and Real Yoghurt Salsa

Mix Real Yoghurt, mango and mint together. Season with salt to taste.
