SIMPLE CLAFOUTI
Low fat dessert treat
SERVING SIZE:
Serves 4 to 6
INGREDIENTS:
1 cup raisins
3 eggs
1 cup low fat milk
2 tsp Sucaryl liquid sweetener
1tsp grated lemon rind
2 tblsp lemon juice
½ c flour
Icing sugar
INSTRUCTIONS:
Sprinkle raisins over the base of a 20cm round ovenproof dish or flan dish. Beat eggs until combined. Beat in milk, Sucaryl, lemon rind, lemon juice and flour until smooth. Pour over raisins. Bake at 190°C for 35 to 40 minutes or until set. Serve hot or cold, dusted with icing sugar.
