SALMON AND REAL YOGHURT PASTA SAUCE
Beautiful easy salmon dish
SERVING SIZE:
Serves 3 to 4
INGREDIENTS:
1 onion
2 cloves garlic
1 tablespoon oil
2 fresh salmon steaks
1 cup Hansells Natural Real Yoghurt
2 tablespoons roasted capsicum pesto
2 tablespoons chopped parsley
300g penne pasta
fresh herbs
INSTRUCTIONS:
Peel onion and chop finely. Crush, peel and chop garlic.
Heat oil in a frying pan and saute onion and garlic for 5 minutes or until onion is clear. Set aside.
Add salmon steaks to pan and cook for 2 minutes each side or until just cooked.
Cut salmon into chunks, removing skin and bones.
Mix Real Yoghurt, pesto, onion, garlic and parsley together.
Cook penne to packet directions. Drain well.
Toss through Real Yoghurt mixture, top with salmon and garnish with fresh herbs. Serve immediately.
