ROASTED AUBERGINE DIP OR SPREAD

Serving size: Makes 1 1/4 cups

Great for serving with Pita crisps

SERVING SIZE:

Makes 1 1/4 cups

INGREDIENTS:

1 medium aubergine
2 tablespoons olive oil
1 small onion, finely chopped
1 clove garlic, crushed
1/2 cup soft white breadcrumbs
1/4 cup Hansells Natural Real Yoghurt
1/4 cup finely chopped parsley
 

SERVING SUGGESTION:

Serve with pita crisps

INSTRUCTIONS:

Cut aubergine into 1.5cm thick slices. Place on a baking tray.

Brush with oil and grill until lightly golden.

Turn and brush uncooked side with oil and grill until golden.

Cool, then remove flesh from skin and place in a blender or food processor.

Add all the ingredients to the aubergine and blend until combined
