REAL YOGHURT CHEESECAKE

This lower fat version of a cheesecake is great for a party

SERVING SIZE:

Serves 10-12

INGREDIENTS:

250g plain sweet biscuits, finely crushed
125g butter, melted
1 1/2 cups cream cheese
4/5 cup Hansells Natural or Lite Real Yoghurt
2 1/2 tablespoons lemon juice
3 eggs, separated
1 1/4 cups sugar
4 teaspoons gelatine
1/2 cup hot water
1/2 cup cream, whipped
 

INSTRUCTIONS:

Blend cream cheese, Real Yoghurt and lemon juice.Beat egg yolks with 1 cup sugar until creamy.Beat egg whites with 1/4 cup sugar until thick with a meringue consistency.Add gelatine to the hot water, then stir briskly with a fork until dissolved. Allow to cool, then add to the yolk mixture.Add this mixture to the cream cheese and Yog-It mixture, stirring thoroughly until well combined.Fold in egg whites and whipped cream. Pour mixture into prepared biscuit base.Refrigerate until firm. Serve with fresh fruit.
