REAL YOGHURT AND CUCUMBER DIP OR SALAD
The salt in this recipe draws the moisture out of the cucumber
SERVING SIZE:
Makes 1 1/2 cups
INGREDIENTS:
1 large cucumber
1/2 teaspoon salt
1 cup Hansells Natural Real Yoghurt
1 clove garlic, crushed
1 tablespoon chopped, fresh mint
2 teaspoons lemon juice
freshly ground black pepper
SERVING SUGGESTION:
Serve chilled with crisp pita wedges or as an accompaniment to curries or other spicy dishes.
INSTRUCTIONS:
Peel and grate the cucumber. Sprinkle with the salt and leave to stand for 30 minutes.Drain the cucumber gently, squeezing out the liquid. Add the remaining ingredients.
