QUICK APRICOT MOUSSE
Dried apricots work well in this recipe
SERVING SIZE:
Serves 4 to 6
INGREDIENTS:
100g dried apricots
1 cup water
1 tblsp gelatine
2 tblsp water
1 cup Natural Real Yoghurt
T tsp Sucaryl liquid sweetener
3 egg whites
INSTRUCTIONS:
Place apricots in a saucepan with first measure of water and bring to the boil. Simmer for 10 minutes or until pulpy. Soak gelatine in second measure of water for 1 to 2 minutes. Mix into apricots and stir until dissolved. Place apricots, yoghurt and Sucaryl in a food processor or blender and blend until pureed. Beat egg whites until stiff and fold apricot mixture into egg whites. Pour into a serving bowl or individual dishes. Refrigerate until set.
