MUSSEL FRITTERS
Easy fritters perfect for a light meal
SERVING SIZE:
Serves 3 - 4
INGREDIENTS:
20 cooked mussels
1 cup Hansells Original Pancakes in a Flash
½ teaspoon Empire Cracked Black Pepper
3 tablespoons chopped fresh chives
¼ cup chopped fresh coriander
1 teaspoon prepared minced chilli
1 egg
1/2 cup milk
2 tablespoons Alfa One Rice Bran Oil Spread
Sweet chilli sauce
SERVING SUGGESTION:
Cook your own mussels for these or use store bought cooked marinated mussels as an alternative.
INSTRUCTIONS:
Chop mussels into small pieces.
Mix Pancakes in a Flash, pepper, chives, coriander, chilli, eggs and milk together in a jug or bowl until combined.
Mix in mussels.
Melt spread on a barbecue hot plate or frying pan.
For each fritter, cook 2 tablespoonsful of mixture until bubbles start to appear.
Turn and cook second side until lightly golden and cooked.
Serve hot with sweet chilli sauce.
