MINESTRONE SOUP WITH A TUSCAN TWIST
Fresh basil leaves work really well with the tomato base of this soup
INGREDIENTS:
210g packet King Traditional Soup Mix Minestrone
400g can diced tomatoes in tomato juice
2 medium ham steaks
300g can butter beans
5 medium tomatoes
1 cup grated Parmesan cheese
Fresh basil leaves to garnish
SERVING SUGGESTION:
Serve soup topped with cheesy tomatoes and garnish with basil leaves.
INSTRUCTIONS:
Cook King Traditional Soup Mix Minestrone according to packet directions. Fifteen minutes before the end of cooking time add undrained diced tomatoes in tomato juice. Dice ham steaks and add to soup with butter beans, five minutes before end of cooking time. Cut tomatoes in half and scatter with cheese. Grill until golden.
