MERINGUE MOUSSE CAKE

If you need a dessert that is easy to make and has the WOW factor, this is hard to beat.

INGREDIENTS:

4 egg whites
¾ cup sugar
70g sachet (from a 5 pack) Vitafresh Colour Free Raspberry
70g packet Hansells Chocolate Mousse
70g packet Hansells Strawberry Mousse
300 ml cream
1 tablespoon icing sugar
1 teaspoon Hansells Natural Strawberry Essence

INSTRUCTIONS:

Beat egg whites until stiff. Beat in Vitafresh and continue beating until mixture is thick and glossy. Mark four, 20cm circles on baking paper. Spread a quarter of the meringue mixture on each marked baking paper to make four discs. Bake at 150 degrees C for 30 minutes or until meringue is dry and crisp. Cool in oven. Make mousses to packet directions. Place a meringue disc on a serving plate. Spread with half the chocolate mousse. Top with a second disc and spread with half the strawberry mousse. Repeat this process finishing with a layer of strawberry mousse. Beat cream until soft peaks form. Fold in icing sugar and strawberry essence. Pile on top of strawberry mousse and top with strawberries. Serve cut into wedges.
