LAMB SHANK AND VEGETABLE CROCKPOT

Wonderful to arrive home to, this Crockpot recipe is a family favourite

INGREDIENTS:

4 lamb shanks
2 carrots
2 parsnips
2 celery sticks
1/2 cup pumpkin (cut into 1cm cubes)
1 swede
1 onion
1/2 red capsicum (optional)
210g packet King Traditional Vegetable Soup Mix
2 cups water
1/2 cup chopped parsley

INSTRUCTIONS:

Brown lamb shanks in a frying pan on all sides. Peel carrots and parsnips and chop finely. Remove fibres from celery and chop celery finely. Peel swede and cut into 2cm pieces. Peel onion and slice finely. Peel and cut pumpkin into 1cm cubes. Place carrot, parsnip, celery, pumpkin, swede and onion in a crockpot. Place lamb shanks on top. Add Vegetable Soup Mix and water. Stir to combine. Cover and cook on low for 10 hours or high for 5 hours. Serve sprinkled with parsley and diced red capsicum.
