JAMAICAN LIME CHEESECAKE WITH LIME SYRUP

INGREDIENTS:

250g pot cream cheese
2 cups prepared Mango Passion Real Yoghurt
2 x 70g sachets (from 5 pack) Jamaican Lime Vitafresh
2 tablespoons gelatin
¼ cup hot water


Filling

125g coconut biscuits
50g Alfa One Rice Bran Oil Spread
1 teaspoon Hansells Natural Coconut Essence
1 lime
½ cup Lime fruit juice syrup

 

INSTRUCTIONS:

Refrigerate while preparing the filling.
To prepare filling, soften cream cheese. Place cream cheese,Real Yoghurt and Vitafresh in a food processor and mix until combined.
Dissolve gelatin in hot (not boiling) water, usingthe microwave for 10-20 seconds if necessary to completely dissolve gelatin. Combine gelatin and cream cheese mixture.
Pour filling into base and refrigerate until set.
Slice lime thinly. Place in a saucepan and pour over lime fruit juice syrup. Bring to the boil. Remove from heat and leave to cool. Refrigerate until ready to serve.
Remove cheesecake from tin and place on a serving plate.
Arrange lime slices over cheesecake and drizzle with the lime fruit juice syrup. Serve cut into wedges.
