INDIAN FISH CAKES WITH CORIANDER AND LIME SAUCE
SERVING SIZE:
Serves 4
INGREDIENTS:
Fish Cakes
425g can tuna in brine
2 teaspoons ground cumin
2 teaspoons ground coriander
1 tablespoon prepared minced chilli
3 eggs
2 tablespoons cornflour
2 tablespoons chopped fresh coriander
1 tablespoon Alfa One Rice Bran Oil Spread
Coriander and Lime Sauce
1 small red onion, finely chopped
2 tablespoons chopped fresh coriander
1 teaspoon grated lime rind
2 teaspoons prepared minced chilli
1 cup Hansells Natural Real Yoghurt
INSTRUCTIONS:
Drain tuna. Mix tuna, cumin, coriander, chilli, eggs, cornflour and fresh coriander together until combined. Melt Rice Bran Oil Spread in a frying pan, shape 1/4 cup quantities of mixture into patties and cook until golden. Serve hot with coriander and lime sauce.
Coriander and Lime Sauce: Mix all ingredients together until combined.
