HEARTY VEGETABLE NOODLE SOUP
Kids will love the noodles in this soup
SERVING SIZE:
Serves 4
INGREDIENTS:
1 packet King Hearty Vegetable Soup Mix
150g packet frozen spinach or about 24 leaves fresh spinach
Pinch ground nutmeg
2 bundles instant noodles
SERVING SUGGESTION:
If wished, you can serve those who prefer plainer flavours first, then add green curry paste to taste or your favourite curry sauce and cook for 5 minutes before serving.
Crispy pappadams are delicious with this combination.
INSTRUCTIONS:
Make soup to packet directions. Ten minutes before the end of cooking add spinach and nutmeg and cook until spinach thaws, stirring to break up the spinach.
Puree soup in a blender, food processor or through a sieve. Return to saucepan.
Bring to the boil and add noodles. Cook for 2 minutes.
Top with crispy bacon. Serve hot with Pane Toscano bread.
