INGREDIENTS:
175g butter
1 cup sugar
1 egg
2 teaspoons Hansells Vanilla Essence
2 cups standard flour
3 tablespoons cocoa
2 teaspoons Hansells Baking Powder
2 teaspoons mixed spice
125g dark cooking chocolate
SERVING SUGGESTION:
Wrap in cellophane paper and tie with an Easter ribbon.
INSTRUCTIONS:
Cream the butter and sugar together until light and fluffy. Beat in the egg and vanilla until combined. Sift flour, cocoa, baking powder and mixed spiced into the butter mixture. Mix until well combined. Form tablespoons of mixture into egg shapes. Place on an ungreased oven tray and flatten with your fingers, reshaping if necessary. Bake at 180 degrees C for 12 minutes or until cooked. Cool on the oven tray for 5 minutes then transfer to a cooling rack. Melt the chocolate in a small bowl over hot water. Dip half of each biscuit in the melted chocolate. Alternatively, put the melted chocolate in a small plastic bag. Snip a small corner off the bag and pipe the chocolate onto the biscuits. Stack in bundles once the chocolate has set. Wrap in cellophane paper and tie with an Easter ribbon.
Tips:
1. Butter and sugar are creamed when the texture is light and fluffy and there are no sugar granules visible.
2 For improved texture in cakes and biscuits, use standard flour rather than high grade flour.
3 Using a measuring spoon ensures consistent, even-sized biscuits.
4 If using a fan bake oven drop the temperature by 20 degrees.
