DATE AND ORANGE TORTE

Torte without sugar

INGREDIENTS:

1 ½ cups dates
½ cup orange juice
1 tblsp grated orange rind
1 tsp grated lemon rind
4 egg whites
1 tblsp Sucaryl liquid sweetener
½ cup flour
½ tsp Hansells Baking Powder
Icing sugar
 

INSTRUCTIONS:

Chop dates roughly. Place in a saucepan with orange juice. Bring to the boil. Remove from heat. Add orange and lemon rinds. Stand for 2 hours then drain well. Beat egg whites until stiff. Fold in Sucaryl. Sift flour and baking powder into egg whites and add dates. Pour into a baking paper-lined 20cm round springform cake tin. Bake at 180°C for 35-40 minutes or until cake is firm to the touch. Cool slightly before removing from tin. Serve lightly dusted with icing sugar.
