CORN FRITTERS WITH CRISPY BACON AND MANGO CHUTNEY
Great for breakfast, brunch or lunch!
SERVING SIZE:
Serves 3 - 4
INGREDIENTS:
1 cup Hansells Original Pancakes in a Flash
1 teaspoon Empire Madras Curry Powder
½ teaspoon salt
410g can cream style corn
1 egg
½ cup milk
Alfa One Rice Bran Oil Spray
8 - 12 rashers bacon
Mango chutney
SERVING SUGGESTION:
For a change, try these with grilled tomatoes and your favourite tomato relish.
INSTRUCTIONS:
Mix Pancakes in a Flash, curry powder and salt together in a jug or bowl.
Add corn, egg and milk and mix quickly to combine.
Spray a barbeque hot plate with oil spray and cook ¼ cupfuls of mixture on the hot plate.
When bubbles start to appear, turn fritters and cook second side until lightly golden and cooked.
While fritters are cooking, cook bacon rashers on the barbecue until crisp.
Serve fritters for a summer breakfast, brunch or lunch with crispy bacon and mango chutney.
