BREAD AND BUTTER PUDDING
Low fat sugar free dessert option
SERVING SIZE:
Serves 4
INGREDIENTS:
4 spiced fruit buns
½ cup sugar-free raspberry jam
4 eggs
2 cups low fat milk
1 tsp Sucaryl liquid sweetener
Icing sugar
INSTRUCTIONS:
Cut buns into thirds horizontally. Spread each slice with raspberry jam. Arrange two layers in a 25cm oval ovenproof dish. Beat eggs until combined. Mix in milk and Sucaryl. Pour over buns in dish. Bake at 160°C for 45 to 50 minutes or until mixture is set. Place under grill to crisp top if wished. Lightly dust with icing sugar. Serve warm.
