A Low Fat Bran Muffin
1 cup flour
1 tsp Hansells Baking Powder
½ tsp salt
1 ½ cups baking bran
1 tsp Sucaryl liquid sweetener
1 tsp Hansells Baking Soda
1 cup low fat milk
1 tblsp golden syrup
1 tblsp butter
Sift flour, baking powder and salt into a bowl. Mix in bran.Make a well in the centre of the dry ingredients.
Mix Sucaryl and egg together. Dissolve baking soda in the milk.
Heat the golden syrup and butter together until melted. Pour the egg, milk and syrup mixtures into the dry ingredients.
Mix quickly with a fork until ingredients are just combined. Three-quarter fill greased muffin tins with the mixture.
Bake at 200°C for 15 to 20 minutes or until muffins spring back when lightly touched.
