AROMATIC XMAS CAKE
Wonderful moist Christmas Cake recipe
INGREDIENTS:
200 g butter
250 g (1 cup) sugar
5 eggs
2 tspns glycerine
2 tspns golden syrup
½ tsp Hansells Vanilla Essence
½ tsp Hansells Lemon Essence
½ tsp Hansells Orange Essence
½ tsp Hansells Almond Essence
½ tsp Hansells Raspberry Essence
½ tsp Hansells Rum Essence
200g currants
200 g flour
½ tsp Hansells Baking Soda
½ tsp nutmeg
½ tsp cinnamon
200g raisins
200g sultanas
100g mixed peel
50g almonds ( blanched/chopped)
50g cherries (halved)
INSTRUCTIONS:
1. Soften butter and beat in sugar till mixture is light and fluffy2. Add eggs one at a time, beat well after each addition3. Blend golden syrup and glycerine4. Measure the six essences into the creamed mixture and beat well5. Sift flour, baking powder, cinnamon and nutmeg6. Mix together the fruits, peel and almonds7. Mix half the sifted ingredients with this fruity mixture 8. Blend sifted dry ingredients and the fruit alternately into the creamed mixture9. Put into well prepared 10� tin and bake at 150-160�C (300�F) for 2½-3½ hours
