APRICOT BROWNIE
Good alternative to chocolate brownie
SERVING SIZE:
Serves 8
INGREDIENTS:
1 cup chopped dried apricots
1 cup Hansells Natural Real Yoghurt
200g butter
1 cup brown sugar
3 eggs
1 teaspoon Hansells Vanilla Essence
1 1/4 cups flour
2 teaspoons baking powder
icing sugar
INSTRUCTIONS:
Mix apricots and Real Yoghurt together and set aside while preparing remaining ingredients.Melt butter in a saucepan large enough to mix all the ingredients.Remove from heat and mix in brown sugar.Add eggs and beat with a wooden spoon until combined.Add vanilla essence and Real Yoghurt /Apricot mixture.Sift flour and baking powder into mixture and beat until combined.Line a sponge roll tin with baking paper.Pour mixture into tin and bake at 180°C for 40 minutes or until brownie springs back when lightly touched.Dust with icing sugar.
