AFTER DINNER MINT TRIFLE
Using a vegetable peeler, shave curls from a bar of white eating chocolate. Try adding a layer of chopped strawberries or crushed meringue to trifle.
Preparation: 15 minutes + 3 hours to chill

2 x 210g packets (4 tubs) Aunt Betty’s Sensational After Dinner Mint Steamed Puddings
1 cup bought vanilla custard
2⁄3 cup cream
150g milk eating chocolate, chopped
2 eggs, separated
2 tablespoons caster sugar
White chocolate curls, to decorate
Remove foil seals from pudding tubs. Microwave each tub on High (100%) for 20 seconds. Turn out onto a chopping board; cool slightly and chop roughly. Divide pudding among 4 x 11⁄2 cup glasses.
Top with custard. Place glasses on a tray.
Place cream and chocolate in a heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch water). Cook and stir for 2-3 minutes or until chocolate melts and mixture combines. Remove from heat; cool slightly. Stir in egg yolks.
Using an electric mixer, beat egg whites in a small bowl to form soft peaks.
Gradually beat in sugar until it dissolves and mixture forms stiff peaks.
Fold half the egg white into chocolate mixture until just combined. Fold in remaining egg white until combined.
Spoon mousse equally among glasses; smooth surface. Cover with plastic food wrap; chill for 3 hours or until firm. Top with curls to decorate. Serve.
